Chengdu hotpot is the numbing-spicy (mala) original: a red cauldron of beef tallow, dried chilies and Sichuan peppercorns that buzz the lips. Order the classics — fresh tripe (maodu), duck intestine, lotus root, beef and luncheon meat — and swish each just seconds in the rolling oil. Mix a sesame-oil-and-garlic dip to cool the burn, and ask for a half-spicy yuanyang pot if you're new to it.
